Pesto tomato chicken

Nom nom nom… here I go on a food recipe kick again! Another quick and easy family favorite in the books. I love recipes that I can put in the oven for a while and then tend to other things, like the 2 year old demanding my attention. šŸ˜‰ 

Here’s how to make it…

-1 lb boneless skinless chicken breasts
-basil pesto
-1 can of diced tomatoes (I like the ones with oregano, etc in them. This is based on your tastes)
-2 blue containers of shredded mozzarella cheese
-whole grain pasta of your choice

Preheat oven to 375. Then take chicken breasts & cut them into long, thick strips. Place the chicken into a 13×9 baking dish. Put pesto on each chicken strip then spread it evenly. Pour the can of diced tomatoes on top of the chicken,  cover the pan with foil & bake for 30-45 minutes or until cooked through. While the chicken is in the oven cook the pasta according to instructions on the box. After the chicken is cooked through, sprinkle the cheese on top and place back in the oven for about 5 minutes to melt it.
Top the pasta with the pesto tomato chicken and voila, delicious dinner is complete!
