Nom nom nom… here I go on a food recipe kick again! Another quick and easy family favorite in the books. I love recipes that I can put in the oven for a while and then tend to other things, like the 2 year old demanding my attention. 😉
Here’s how to make it…
-1 lb boneless skinless chicken breasts
-1 can of diced tomatoes (I like the ones with oregano, etc in them. This is based on your tastes)
-2 blue containers of shredded mozzarella cheese
-whole grain pasta of your choice
Preheat oven to 375. Then take chicken breasts & cut them into long, thick strips. Place the chicken into a 13×9 baking dish. Put pesto on each chicken strip then spread it evenly. Pour the can of diced tomatoes on top of the chicken, cover the pan with foil & bake for 30-45 minutes or until cooked through. While the chicken is in the oven cook the pasta according to instructions on the box. After the chicken is cooked through, sprinkle the cheese on top and place back in the oven for about 5 minutes to melt it.
Top the pasta with the pesto tomato chicken and voila, delicious dinner is complete!
Let me start this post by saying… I LOVE FOOD! And honestly I never thought that I would be able to get fit, lose weight and have my love for food satisfied. Boy was I wrong! 21 Day Fix has been AH-MAZING! I have been able to enjoy the real flavor of delish, non-processed foods and fall in love with that. Pork Carnitas – See, I kid you not about our love for Mexican inspired food!
- 2 pounds of boneless pork chops
- 21 Day Fix Southwest Seasoning
- 2 cups of Free Range Organic Chicken Stock
- Pico (find recipe here)
- Shredded Cheddar Cheese
- 10 Corn Tortillas
Add the pork chops, Southwest seasoning and chicken stock to your slow cooker and set on low for about 6 hours. When done cooking shred the pork chops. Place one red container of pork on 2 warmed tortillas, sprinkle with one blue container of cheese and top with a green container of Pico! Easy and delish! This is 1 yellow, 1 red, 1 green and 1 blue container.
Sloppy Joes – Everyone loves a classic and it is a comfort food that you don’t always realize you CAN have! We eat these open-faced to only use one yellow. 🙂
- 1.25 pounds of lean ground turkey
- 1-2 Green Containers of Pico depending on your taste (find recipe here) – when I said this was a favorite, no joking! It is super versatile too!
- 1 tsp. garlic powder
- 1 tsp. oregano
- 1 – 8 oz. can of organic tomato sauce
- 1/2 cup of organic ketchup
- Shredded Cheddar Cheese
- Whole wheat bread or buns
Brown the ground turkey. Once browned add the Pico and cook for a few minutes. Add the garlic powder, oregano, tomato sauce and ketchup. Simmer on low for about 10 minutes or until it is heated through. Toast the bread or buns if you wish. Top one slice of bread or half of a bun with a green container of the meat mixture then sprinkle with a blue container of cheese. Voila! Dig into this American classic! This is 1 yellow,1 red, 1/2 green, 1/2 purple and 1 blue
